In a bowl, combine beef strips, 2 tablespoons of soy sauce, garlic, and ginger. Marinate for 15 minutes.

In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble until cooked. Transfer the scrambled eggs to a plate and set aside.

In the same pan, add another tablespoon of oil and stir-fry the marinated beef strips until browned. Remove from the pan and set aside.

Add onions and capsicum to the pan, and sauté until tender. Sautéing is to fry food in a small amount of fat, stirring occasionally for even cooking throughout. If meat releases moisture you can pour some out. Do not over-crowd the pan, split meat into batches.

Add the cooked rice, scrambled eggs, beef strips, and the remaining 2 tablespoons of soy sauce to the pan. Stir-fry for 3-4 minutes, until everything is heated through and well combined.
