This creamy pasta sauce is a tasty side for 4-6 people. You can easily substitute your favorite ingredients. Baby spinach is a favorite in our household and the richness of the sun-dried tomatoes is absorbed into the sauce.
Melt 1 tbsp butter in non stick pan add garlic and simmer for about 1 minute until fragrant
Add spinach, sun-dried tomatoes, oregano, basil and red pepper flakes.
Stir until spinach is wilted then set aside in bowl for later
Melt remaining 2 tbsp of butter and add corn starch
simmer until lightly browned, about 1 minute.
Gradually whisk in chicken broth then cream until both are incorporated Sauce should be thickening through this process
Add the spinach sun-dried tomato mix and stir regularly
Do not boil the sauce! Keep it on low or med-low.
Stir in pasta until well combined 1-2 minutes. Serve immediately.
