Sun-dried Tomato Spinach Pasta

- 3 tbsp butter, unsalted
- 0.5 cup sun-dried tomatoes
- 1.2 oz baby spinach, shreaded
- .75 cup cream
- 1 tsp garlic, minced
- 1/2 tsp basil
- 1 tsp red pepper flakes, optional
- 9 oz fettuccine
- 1.5 cup chicken stock
- 2 tbsp corn starch
- Melt 1 tbsp butter in non stick pan add garlic and simmer for about 1 minute until fragrant
- Add spinach, sun-dried tomatoes, oregano, basil and red pepper flakes.
- Stir until spinach is wilted then set aside in bowl for later
- Melt remaining 2 tbsp of butter and add corn starch
simmer until lightly browned, about 1 minute. - Gradually whisk in chicken broth then cream until both are incorporated Sauce should be thickening through this process
- Add the spinach sun-dried tomato mix and stir regularly
- Do not boil the sauce! Keep it on low or med-low.
- Stir in pasta until well combined 1-2 minutes. Serve immediately.
