Delicious oat and coconut biscuits. ANZAC biscuits were sent to soldiers abroad because the ingredients did not spoil easily. ANZAC DAY (April 25) marks the anniversary of the first major military action fought by Australian and New Zealand forces during World War 1.
Preheat oven to 180C (350F).
Mix together flour, sugar and rolled oats.
Dissolve baking soda in boiling water and add to the butter and golden syrup.
Make a well in the center of the dry ingredients and stir in the liquid.
Roll into balls and place on lightly greased tray.
Bake until lightly brown.
This is my adaption of the Edmonds Sure to Rise ANZAC Biscuit recipe.
