Filling

  1. Boil the potatoes and mash to lumpy consistency.
  2. If using fresh salmon, pan sear until it flakes easily.
  3. Put the salmon and potatoes aside to cool down.
  4. Clean out and dice the peppers.
  5. Mix eggs, old bay, banana sauce, green onions and peppers together.
  6. Work the mashed potatoes and salmon into the mix.

Coating

  1. Crush cornflakes by hand or with a rolling pin in a bag until shards (not dust).
  2. Drop spoonful of the wet mix into the corn flakes coating the outside.
  3. Shape and put straight into a hot pan with olive oil.
  4. Cook each side until lightly browned and cooked through.
