Salt & Pepper Fish

Discover the perfect balance of flavors in this Salt & Pepper Fish recipe, an intermediate level dish that serves 4 and is ready in just 20 minutes. Succulent cod fillets are marinated before being shallow-fried until crispy, golden brown. The dish is brought to life with a medley of garlic, chili, and ginger, for a delightful combination of spicy and tangy notes.

Fish Marinade

  • 1 tbsp rice vinegar
  • 1 tbsp water
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 egg
  • 6 tbsp cornstarch

Main Ingredients

  • 800 g cod filet sliced into bite size pieces
  • 2 tbsp garlic minced or 6 cloves
  • 1 red chili sliced
  • 2 tsp ginger minced
  • 1/2 white onion chopped
  • 1 tsp cane sugar
  • 1 tbsp rice vinegar
  • 1 tbsp water
  • salt and pepper to taste

Frying

  • 1/3 cup avocado oil for frying
  1. Pat fish very dry and slice into bite size pieces. This step is very important.
  2. In a mixing bowl, mix together your marinade ingredients. Pour over the fish, stir until coated with batter. Store in refrigerator.
  3. Prepare Main ingredients.
  4. In a pot with avocado oil set over high heat, shallow fry your battered fish until golden crispy brown, about 7 minutes. Remove fish from pot. Pour out the oil.
  5. In the same pot set over medium heat, sauté ginger, garlic, red chili, white onion and sugar. Throw in battered fish. Pour water and vinegar over top. Fry for 1 minute and serve. Season with salt and pepper to taste. Serve and enjoy!

Substitues

  1. Vinegar substitutes
    1 part water 1 part vinegar
    1 tbsp. rice vinegar + 1 tbsp. water
    1 tbsp. Apple cider vinegar + 1tbsp. water

    Wine substitute:
    2 tbsp. Dry sherry wine
    2 tbsp. White wine

  2. Onion substitutes
    1/2 white onion
    2 green onion stalks
