Salmon Edamame Soba Noodles

  • 1 lb salmon, no skin
  • 0.25 cup honey
  • 0.25 cup soy sauce (reduced salt)
  • 0.33 cup olive oil
  • 7 oz soba buckwheat noodles
  • 2 tbsp rice vinegar
  • 1 tbsp rice vinegar
  • 1 tbsp ginger, minced
  • 1 garlic, clove segment
  • 1 cup edamame, shelled
  • 0.5 cup carrots, julienne
  • 3 stick green onions
  • 3 tbsp sesame seeds
  1. Sauce: whisk together the honey, soy sauce, rice vinegar, ginger, garlic and olive oil in a bowl then set aside.
  2. Cook noodles according to packet instructions until al dente.
  3. Cook salmon fillets in a fry pan with a little olive oil.
  4. Add carrots, edamame and soba noodles to sauce.
  5. Drain salmon and flake into noodles and sauce.
  6. Mix together and serve.
  7. Garnish with sesame seeds over finished dish.
