A thick creamy chunky soup full of flavor, great for those cold nights. I would make this to use left over ham from winter Christmas in the US.
Prepare soup mix as directed. Our soup mix requires 8 cups water ( add 1 extra cup for long simmer time)
Bring water to the boil then turn down to simmer
Add soup mix, vegetables and ham, Simmer and stir often.
Ready in 20-60 minutes once vegetables and soup thickness is to your liking. I prefer a longer simmer time to let the vegetables break down and combine into the soup a little.
Last few minutes add cheese and season with pepper to taste
Use a non oily melting cheese such as Monterrey Jack.
