Ingredients
  • 3 tbsp butter, unsalted
  • 0.5 cup sun-dried tomatoes
  • 1.2 oz baby spinach, shreaded
  • .75 cup cream
  • 1 tsp garlic, minced
  • 1/2 tsp basil
  • 1 tsp red pepper flakes, optional
  • 9 oz fettuccine
  • 1.5 cup chicken stock
  • 2 tbsp corn starch
Instructions
  1. Melt 1 tbsp butter in non stick pan add garlic and simmer for about 1 minute until fragrant
  2. Add spinach, sun-dried tomatoes, oregano, basil and red pepper flakes.
  3. Stir until spinach is wilted then set aside in bowl for later
  4. Melt remaining 2 tbsp of butter and add corn starch simmer until lightly browned, about 1 minute.
  5. Gradually whisk in chicken broth then cream until both are incorporated Sauce should be thickening through this process
  6. Add the spinach sun-dried tomato mix and stir regularly
  7. Do not boil the sauce! Keep it on low or med-low.
  8. Stir in pasta until well combined 1-2 minutes. Serve immediately.
