Ingredients
  • 1 packet chicken soup mix (Bear Creek - Creamy potato soup 8 cup)
  • 1 rotisserie chicken, shredded
  • 2 cup cauliflower, rough cut
  • 2 cup broccoli, rough cut
  • 1 cup carrots, grated
  • 6 cup water
  • 1 cup milk
  • 2 cup chicken stock
  • 1 pinch pepper
Instructions
  1. Prepare soup mix as directed. Our soup mix requires 8 cups water ( add 1 extra cup for long simmer time)
  2. Bring water to the boil then turn down to simmer
  3. Add soup mix, vegetables and ham, Simmer and stir often.
  4. Ready in 20-60 minutes once vegetables and soup thickness is to your liking. I prefer a longer simmer time to let the vegetables break down and combine into the soup a little.
  5. Season with pepper to taste

  7. Bear Creak soup mix may not be available in some area's. You can use any similar chicken soup ideally for 6-8 cup soup. Most supermarkets will carry a local brand soup mix. Creamy chicken or noodle work great.
