Creamy Potato and Ham Chunky Soup

  • 1pkt 1 pkt creamy potato soup mix (Bear Creek – Creamy potato soup 8 cup)
  • 10 oz diced ham
  • 1.5 cup cauliflower, rough cut
  • 1.5 cup broccolli
  • 1 cup carrots grated
  • 1 cup celery grated
  • 1 cup shreaded monterey jack cheese
  • 8-9 cup water
  • 1 pinch pepper
  1. Prepare soup mix as directed. Our soup mix requires 8 cups water ( add 1 extra cup for long simmer time)
  2. Bring water to the boil then turn down to simmer
  3. Add soup mix, vegetables and ham, Simmer and stir often.
  4. Ready in 20-60 minutes once vegetables and soup thickness is to your liking. I prefer a longer simmer time to let the vegetables break down and combine into the soup a little.
  5. Last few minutes add cheese and season with pepper to taste

  1. Use a non oily melting cheese such as Monterrey Jack.
