Salt & Pepper Fish

Succulent cod fillets are marinated before being shallow-fried until crispy, golden brown. The dish is brought to life with a medley of garlic, chili, and ginger, for a delightful combination of spicy and tangy notes.
Fish Marinade
- 1 tbsp rice vinegar
- 1 tbsp water
- 1 tsp salt
- 1 tsp black pepper
- 1 egg
- 6 tbsp cornstarch
Main Ingredients
- 800 g cod filet sliced into bite size pieces
- 2 tbsp garlic minced or 6 cloves
- 1 red chili sliced
- 2 tsp ginger minced
- 1/2 white onion chopped
- 1 tsp cane sugar
- 1 tbsp rice vinegar
- 1 tbsp water
- salt and pepper to taste
Frying
- 1/3 cup avocado oil for frying
- Pat fish very dry and slice into bite size pieces. This step is very important.
- In a mixing bowl, mix together your marinade ingredients. Pour over the fish, stir until coated with batter. Store in refrigerator.
- Prepare Main ingredients.
- In a pot with avocado oil set over high heat, shallow fry your battered fish until golden crispy brown, about 7 minutes. Remove fish from pot. Pour out the oil.
- In the same pot set over medium heat, sauté ginger, garlic, red chili, white onion and sugar. Throw in battered fish. Pour water and vinegar over top. Fry for 1 minute and serve. Season with salt and pepper to taste. Serve and enjoy!
