Beef Fried Rice

- 1 lb Beef strips
- 1/4 cup soy sauce, divided
- 2 tsp garlic, minced
- 1 tsp ginger, minced
- 2 cup cooked rice
- 2 large eggs, beaten
- 1 medium onion, diced
- 1 medium capsicum, diced
- 2 tbsp vegetable oil, divided
- Salt and pepper, to taste

- In a bowl, combine beef strips, 2 tablespoons of soy sauce, garlic, and ginger. Marinate for 15 minutes.
- In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble until cooked. Transfer the scrambled eggs to a plate and set aside.
- In the same pan, add another tablespoon of oil and stir-fry the marinated beef strips until browned. Remove from the pan and set aside.
- Add onions and capsicum to the pan, and sauté until tender.
Sautéing is to fry food in a small amount of fat, stirring occasionally for even cooking throughout.
If meat releases moisture you can pour some out.
Do not over-crowd the pan, split meat into batches. - Add the cooked rice, scrambled eggs, beef strips, and the remaining 2 tablespoons of soy sauce to the pan. Stir-fry for 3-4 minutes, until everything is heated through and well combined.
- Season with salt and pepper to taste, and serve hot.
