Creamy Sun-dried Tomato and Spinach Pasta

This creamy pasta sauce is a tasty side for 4-6 people. You can easily substitute your favorite ingredients. Baby spinach is a favorite in our household and the richness of the sun-dried tomatoes is absorbed into the sauce.

  • 3 tbsp Butter Unsalted
  • 0.5 cup Sun-dried Tomatoes (chopped)
  • 1.2 oz Baby Spinach (shreadded)
  • ¾ cup Cream
  • 1 tbsp Minced Garlic
  • ½ tsp oregano dried
  • ½ tsp basil dried
  • 1 tsp Red Pepper Flakes (optional more or less to personal taste)
  • 9 oz Fettuccine - Long ribbon pasta
  • 1.5 cups Chicken Stock
  • 2 tbsp Corn Starch
  1. Prepare the pasta as advised on packet
  1. Melt 1 tbsp butter in non stick pan
  2. add garlic and simmer for about 1 minute until fragrant
  3. add spinach, sun-dried tomatoes, oregano, basil and red pepper flakes
  4. Stir until spinach is wilted then set aside in bowl for later
  5. Return pot to stove no need to clean.
  6. Melt remaining 2 tbsp of butter and add corn starch
  7. simmer until lightly browned, about 1 minute.
  8. Gradually whisk in chicken broth then cream until both are incorporated
  9. Sauce should be thickening through this process
  10. Add the spinach sun-dried tomato mix and stir regularly
  11. Do not boil the sauce keep it on simmer at med-low heat
  12. Stir in pasta untill well combined 1-2 minutes
  13. Serve immediately
