Pecan Raspberry Blue Salad

Honey roasted pecans add crunch and sweetness to offset the creamy blue cheese. All of which is smothered in a raspberry and black walnut vinaigrette dressing!

  • 4 oz english cucumber (skin on sliced)
  • 4 oz cherry tomatoes
  • 2 cups lettuce (chopped)
  • 1 bell pepper (chopped)
  • 1 cup baby spinach (shredded)
  • ½ cup reduced fat blue cheese (crumbled)
  • 6 tbsp honey roasted pecans
  • 6 tbsp raspberry black walnut vinaigrette dressing
  1. Mix lettuce, tomatoes, bell pepper, cucumber and spinach together.
  2. Keep chilled until ready to serve.
  3. After plating sprinkle with blue cheese and pecans
  4. Last add the dressing

~ The Melting Pot was the brand of raspberry walnut vinaigrette use. Many variations are now available at your local supermarket.
~ Depending on your ingredients pick a contrasting color for the bell pepper.
