Easy Ice Cream - Hokey Pokey

Hokey pokey is a New Zealand Favorite, consisting of a rich vanilla ice cream with small pieces of honeycomb toffee. No need for an ice cream maker just a bowl and a beater.

Serves: 6 Cups
  • 1 x can condensed milk (Highlander or Nestle La Lechera)
  • 1 x 500 mls (one pint) cream
  • ½ a batch of hokey pokey Recipe Link
  • 1 teaspoon vanilla essence
  1. Place hokey pokey in a bag and crush with a rolling pin
  2. Beat cream and vanilla essence until not quite whipped (should be thick and have increased in volume).
  3. Beat in the condensed milk.
  4. Add the crushed hokey pokey.
  5. Pour into a freezer container and leave to set.
