This is a chunky, creamy soup recipe that will fill you up while remaining very low in calories!

Ingredients
  • 1 pkt Bear Creek - creamy chicken soup, 1 container (8 cup)
  • 1 rotisserie chicken (shredded)
  • 2 cups cauliflower (rough cut)
  • 2 cups broccoli (rough cut)
  • 1 cup carrots (grated)
  • 6 cups water
  • 1 cup milk
  • 2 cups Chicken Stock
  • Pepper (optional)
Instructions
  1. Add soup mix, water, milk and stock to the pot.
  2. Bring to the boil then turn heat down to simmer for approximately 30 minutes.
  3. Add vegetables and chicken
  4. Simmer and stir regularly.
  5. Season with pepper to taste
Notes
~ I prefer the longer simmer time to let the vegetables break down and combine into the soup.
~ Bear Creak soup mix may not be available in some area's. You can use any similar chicken soup ideally for 6-8 cup soup. Most supermarkets will carry a local brand soup mix.
~ Nutritional values may vary depending on ingredients used.
