Melted candy creates a simple visual treat.

  • 1 cup sugar (granulated)
  • 0.75 cups butter
  • 1 tsp vanilla
  • 2 large eggs
  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 10-12 hard candy (example Lifesavers)
  1. Beat sugar, butter, vanilla and eggs together
  2. Stir in flour, baking powder and salt.
  3. Cover; refrigerate about 1 hour or until firm.
  4. Heat oven to 375°F (190°C)
  5. Cover cookie sheet with baking paper or foil.
  6. On lightly floured surface, roll small portions of the dough 5mm (1/5 inch) thick.
  7. Cut into desired shapes with cookie cutters and remove centers.
  8. Place cookies on parchment paper.
  9. Place the candy inside cutouts using whole or partially crushed pieces of candy.
  10. Leave pieces as large as possible as candy melts easily.
  11. Bake 7 to 9 minutes or until cookies are very light brown and candy is melted.
  12. Transfer baking paper to cooling rack.
  13. Do not remove from baking paper until cool and candy has re-set (about 20 minutes).
~ Do not use fine candy dust.
~ To crush candy, place in plastic bag and tap with rolling pin.
~ It is delicate work transferring the very thin cookie shapes to the baking paper.
~ You may wish to try removing the centers after cookie shape is on baking paper.
~ Candy may seep under cookies making the back less attractive as the front.
~ The cookies pictured were to thick, in the future I would make them thinner.
