A thick creamy chunky soup full of flavor. A great way to use left over ham from Christmas!

Ingredients
  • 1 pkt Creamy potato soup mix (suggested Bear Creek - Creamy potato soup 8 cup)
  • 10 oz diced ham
  • 1.5 cups cauliflower (rough cut)
  • 1.5 cups broccoli (rough cut)
  • 1 cup carrots (grated)
  • 1 cup celery (grated)
  • 1 cup shredded monterrey jack cheese
  • 8-9 cups water
  • Pepper (optional)
Instructions
  1. Soup mix requires 8 cups water ( I add 1 extra cup for long simmer time)
  2. Bring water to the boil then turn down to simmer
  3. Add soup mix, vegetables and ham
  4. Simmer and stir regularly.
  5. Last few minutes add cheese and season with pepper to taste
Notes
- This soup can be ready in 20 minutes. I prefer the longer simmer time to let the vegetables break down and combine into the soup.
- Use a non oily melting cheese such as Monterrey Jack.
- Nutritional values may vary depending on ingredients used.
