ANZAC biscuits were sent to soldiers abroad because the ingredients did not spoil easily. ANZAC DAY (April 25) marks the anniversary of the first major military action fought by Australian and New Zealand forces during World War 1.

Ingredients
  • 1 cup plain flour
  • 1 cup rolled oats or oat meal (uncooked)
  • 1 cup shredded coconut
  • 0.5 cups caster sugar
  • 100g butter
  • 0.5 tsp baking soda
  • 2 tbsp golden syrup
  • 2 tbsp boiling water
Instructions
  1. Preheat oven to 180C (350F).
  2. Mix together flour, sugar and rolled oats.
  3. Melt butter and golden syrup.
  4. Dissolve baking soda in boiling water and add to the butter and golden syrup.
  5. Make a well in the center of the dry ingredients and stir in the liquid.
  6. Roll into balls and place on lightly greased tray.
  7. Bake for 15mins until lightly brown.

- This is my adaption of the Edmonds Sure to Rise ANZAC Biscuit recipe.
