Easy Ice Cream - Mint Chocolate

A decadent ice cream sweet that is very easy to make. No need for an ice cream maker just a bowl and an beater!

Serves: 6 Cups
  • 1 x can Nestle La Lechera - Fat Free Condensed Milk
  • 1 x 500ml of Standard Whipping Cream
  • 1 x tsp of Peppermint Essence
  • 3 drops Green Food Coloring
  • 180g Chocolate Chips (example using Ghirardelli Dark Chocolate)
  1. Add peppermint, food coloring and cream to a bowl.
  2. Beat cream until nearly whipped. (should be thick and have increased in volume)
  3. Beat in the Condensed Milk
  4. Stir through the chocolate chips
  5. Pour into a freezer container and leave to set
~ Highlander Condensed Milk can replace Nestle La Lechera.
~ In Australia and New Zealand the can is 425g vs the 397g US Nestle La Lechera. One can is sufficient in both cases.
~ Nutritional information may vary based on brands/volume used.
~ Recipe donated by my mum who has been making variations of this for many years. This is my first attempt at her recipe using US ingredients.
